In the spring the shoots are a vegetable, slice the white part and serve. I found frying them like leeks is superb! Also preserves the harvest. Coat the slices with tapioca starch or corn starch, then quickly fry.
Makes for a great meal topper👌

How empowering would it be to create a cookbook that inspires more nature chefs in the world, knowing how to gather wild, process, cook, preserve, present, and steward the land!
Maybe one day a cultural cookbook will happen on for #cascadia #pnw
For now here's a taste of it💚
Recipe;
2 cups packed nettle, leaves
3/4 cup butter (or coconut oil)
3/4 cup sugar (organic cane)
3 eggs
1/2 lemon juice and zest
2 cups flour (or GF flour)
2 tsp baking powder
1/2 tsp salt - blanch and squeeze nettle
- purée with lemon juice, zest
- whip butter with sugar
- add one egg at a time - add nettle purée - mix in flour, baking powder, salt.

Icing;
Frozen berries, stewed with cane sugar. Blend with soaked cashews and honey.
